Salting with a delicate touch

Our salmon are predominantly dry-salted by hand with coarse fishing salt. This way, the fish slowly loses water, develops a firm texture, and acquires its characteristic flavor. Hand-curing creates fine, balanced aromas. A subsequent long maturation period makes the salmon perfect.

We smoke exclusively over local hardwood chips – using both hot and cold smoking methods. Our eels are traditionally refined in an Altona oven, while the salmon are predominantly cold-smoked with particular care.

Precision meets Technology

Our cutting and packaging systems operate with state-of-the-art technology and utmost precision. AI-supported systems portion each fish optimally – for example, two salmon slices at exactly 50 g. This way, we combine artisanal standards with digital precision and consistent quality.

Our products bear the identification mark: an oval symbol with details of the country of production and the establishment – for us, almost exclusively at the Zetel-Neuenburg site.

Our internal quality assurance, with its own laboratory and S2 standard, ensures seamless control of all production steps – for consistently high product quality and maximum safety.

Approximately 4,000 analyses annually

Around 4,000 microbiological analyses are carried out annually. In addition, we commission external laboratories for additional independent control.

Comprehensive Laboratory Tests

Our in-house laboratory monitors key quality parameters such as salt content, residual moisture, and pH value, and conducts sensory evaluations. Additionally, raw materials and operational hygiene are monitored, and product development is professionally supported.

S2 Laboratory for Secure Microbial Analysis

The S2 safety level laboratory enables fast and protected on-site examination of relevant microorganisms – a crucial component for reliable product safety.

Continuously IFS-Certified

Since 2005, the company has continuously met the requirements of the International Featured Standards (IFS) – reliable proof of structured quality and safety management.
