The fresh salmon is filleted and salted by hand with extreme care. In the maturing time the penetrating salt extracts tissue water from the fish, intensifies the flavour and makes it wonderfully firm to the bite. Finally, the fillets are gently cold-smoked over precious woods. This enables it to develop its exquisite aroma.
