Organic Smoked Salmon
Far out in the rough Atlantic waters off the Irish coast, organic salmon are raised on an offshore farm: in a species-appropriate and natural way. The significantly lower stocking density compared to conventional farmed salmon provides the fish with much more swimming space. This is good for animal welfare and results in firmer muscle meat. Genetically modified feed and chemical additives are absolutely taboo.
At our facility in Neuenburg, we refine the fish: Here, the organic fillets are hand-dry-salted and, after a drying and maturing period, traditionally cold-smoked in an Altona oven over native woods.
